I dont know if its been mentioned yet, but I think one of the most practical would be an armored truck. You have all the protection and security from not only the zombies, but other human threats as well. And unlike these dune buggies people are posting, if you crash or break down.....you are still secure.

A ford f-250 diesel fx4 supercab. I'd get the skid plates, throw on some larger tires. Weld an armored box in the back, that way if can not only haul more, but it can pull doublt duty as a gun truck. it can get places the larger trucks can't and can hold its own off road. Roadarmor makes this awsome cattle crusher for the front and an equally tough bumber for the rear. I'd throw a 10k winch on the front and weld bars over the windows with a layer of plexi bolted to the on top of that. Throw a couple cans of fix-a-flat in the back and I'm good to go.
